Berry Muffins
Makes 8 muffins
Ingredients:
160g Platypus Foods Baking Mix
45g Sugar
65g butter, softened
1 teaspoon vanilla
125ml rice milk
3/4 cup (100g) frozen blueberries, raspberries or other fruit
Method:
Pre-heat oven to 180 degrees. Line and grease muffin tray
Mix all ingredients except berries together with whisk or electric mixer for 1 minute. Add berries and mix briefly. Spoon into greased patty pans and bake for 15 minutes cupcake size, 25 minutes muffin size, or until skewer inserted in the middle comes out clean.
