Banana Bread or Muffins
Makes 12 large muffins
Ingredients:
260g Platypus Foods Baking mix
¼ cup brown sugar (1/2 cup if you like sweeter muffins)
½ teaspoon baking soda
1 tablespoon cider vinegar
350g (3) very ripe bananas
70ml rice milk
85g butter, melted
1 teaspoon vanilla
Method:
Pre-heat oven to 180 degrees. Line and grease a bread pan or muffin tray
Mix baking mix and sugar and set aside.
Mash bananas with a fork. Add rice milk, butter and vanilla. Mix in baking soda and then quickly but thoroughly, mix in vinegar (mixture will start to bubble). Quickly add banana mix to flour, mix briefly (don’t over-mix) and poor into pan
Bake 25 minutes for muffins, 45-55 minutes for banana bread, or until skewer inserted comes out clean
